Healthy Curry Chicken


The older you get the harder it is to justify poor eating habits, as you start to realize that you are what you eat and that you aren’t invincible. Being on the Paleo diet doesn’t mean eating bacon everyday or red meat everyday, those meats will kill you earlier so limit your intake of it and eat grass fed meats if you are, eating white meats like chicken breast will do you better. Think lower on the food chain.

I don’t think people realize how healthy curry chicken is, curry is a blend of different spices and typically contains turmeric in it that fights inflammation, it also contains cinnamon that helps lower blood pressure as well as chili pepper. I have added extra doses of turmeric, cinnamon and chili for additional potency.

Healthy Curry Chicken

2 Organic Free Range Chicken Breast ( cut into cubes)

1 tbsp Curry Powder

1 tbsp Turmeric Powder

1/4 tsp  fresh chili or cayenne powder

1 tsp Chopped fresh thyme

1/2 tsp Black Pepper

1/4 cup Chopped Onion

2 garlic Cloves minced

1/8 tsp Cinnamon

1 tbsp Coconut Oil

2 tbsp Coconut Milk

2 cup chopped vegetables( sweet potatoes, red pepper, carrots)

1/2 cup water

sea salt to taste


1.Saute onions with coconut oil until translucent.

2. Add in all spices, thyme, chili with chicken and saute on medium heat, add in hard vegetables and water, cover with a lid and simmer for 20 mins.

3. Add in coconut milk and simmer for another 5-10 mins, add sea salt to taste.

Serve with cauliflower rice.

Paleo Primal Spaghetti


Yep, you can have your spaghetti and eat it too.



*2 pkgs zero carb noodle/shirataki noodles

1 lb ground chicken/turkey

3 cups organic tomato sauce

2 tbsp olive oil

1/2 chopped onion

2 cloves minced garlic

1 tbsp mixed Italian herb seasoning

1 carrot finely diced

2 sticks of celery finely diced

1/2 mushrooms finely diced

1/2 zucchini diced

*1 tbsp of arrow root flour

1 tsp sea salt

1/2 tsp black pepper

Parsley as garnish


  1. Cook onions until medium soft, then add in meat until brown, saute for another 5-10 minutes.
  2.  Add in celery and carrots, cook for 5 minutes then add in the rest of the vegetables and tomato sauce along with garlic, salt, pepper, seasonings and arrow root flour. Simmer on low/medium heat for another 15 minutes.
  3.  Remove noodles from liquid in the package. Boil the noodles in hot water for 10 minutes and rinse thoroughly. Stir the noodles in a non stick pan for 5-10 minutes for them to be dry.
  4. Serve the tomato meat sauce on top of the noodles and garnish with chopped fresh parsley.

*If you don’t have arrow root flour you can substitute with tapioca flour.

*Zero Carb Noodles/Shirataki noodles are available at the Asian grocery store or in the vegetarian section in your local supermarket, you can also get them at your local health food store.

Paleo Stir Fried Noodles


Can you really have stir fried noodles on the paleo primal diet? the answer is yes, with zero carb noodles or shirataki noodles, these noodles actually have the texture of noodles not like spaghetti squash that has the texture of mush. These noodles are available in your local grocery store in the Asian/Vegetarian section.


1 pkg zero carb noodles

1/4 cup sliced onions

1/4 cup sliced red pepper

1/4 cup sliced purple cabbage

1 minced garlic clove

1/2 cup of diced chicken breast

2 tbsp olive oil

1 tsp tamari sauce

1/4 tsp sesame oil

1/4 tsp chili paste or sauce

Chopped lettuce for garnish


1.Heat skillet to medium-high heat and add oil, add chopped chicken breast and stir fry constantly until cooked.

2. Add in onions and garlic to chicken, stir fry for a minute, add in all vegetables except lettuce. Stir fry for another 3-5 minutes.

3. Add in tamari, sesame oil and chili paste and stir fry for another minute.

4. Prepare noodles, drain liquid from package, boil noodles for 5 minutes, rinse.  Add noodles to a non stick pan with oil, stir until their is minimal liquid.  Add in chicken and vegetables and stir fry all together.

4. Serve on a plate with chopped lettuce as garnish.

The New Year Diet with Shepard’s Pie

shepard-pieIt’s that time of the year again, time to go on the healthy diet. Shepard’s pie doesn’t sound healthy but you can make it healthy with the Paleo primal diet. Just a few changes, it looks like I used Russet or Idaho potatoes but I actually used sweet potatoes called O’Henry sweet potato, you can use any kind of sweet potato you like or that is available but I find the O’Henry holds up better because it has a little more starch than the regular orange sweet potato.


*2-3 lb Sweet Potato cooked and mashed

2 lb ground turkey or chicken

1/2 cup diced onions

1/2 cup diced carrots

1/2 cup diced celery

1/2 chopped mushrooms

1 tbsp sea salt

1/2 tbsp black pepper

1 tbsp of mixed spices : thyme, oregano, sage, garlic

2 tbsp olive oil

1 tbsp arrow root flour (optional)


  1. Brown ground meat in a large skillet with oil, add salt and pepper
  2. When meat is browned add in onions, carrots and celery along with spices, saute for 5-10 minutes then add in mushrooms and saute for another 5 mins, add in arrow root flour and mix for another minute.
  3. Let meat and vegetables mixture cool for about 10-15 minutes, spoon sweet potato over mixture and use a fork to create lines on top.
  4. Put the skillet in the oven for 20-30 minutes, crisp top by using broil in the last 5 minutes. Take skillet out of oven and let it stand for another 15 minutes before serving.

* If you are using the orange sweet potato it is better to add two tbsp of arrow root flour to the mash as orange sweet potato’s are much more watery than O’Henry’s.
