Got Constipation, Try This!

I know I said to reduce your fermented foods due to the salt content but sometimes you need to clean out your system and kimchi is perfect for that. As you age your digestive system slows and you need aids. I had severe constipation, I thought I could eat fried foods and have a meat heavy diet for all my life and not suffer any consequences, boy I was wrong! I tried everything from eating okra to fresh salads, to more fiber in my diet, all this helped but nothing compares to kimchi.

Kimchi Recipe:

2 lbs napa cabbage

1/2 cup of sea salt

Water to submerge napa cabbage

1/2 cup of shredded carrots

1/2 cup of green onion

1/2 cup of gochugaru, Korean red chili flakes

2 tbsps minced ginger

6 cloves garlic minced

1 tbsp salted shrimp paste  or fish sauce (optional)

1 tbsp sugar

Instructions:

  1. Cut cabbage into bit size pieces, place in a bowl with salt rubbed into it. Submerge cabbage with water. Let stand from 5 hours up to 24 hours.
  2. Drain the cabbage, place all the other ingredients with the cabbage and mix.
  3. Pack the cabbage mixture into a glass jar to the top, place into the refrigerator and let it ferment for about 1 week, it will last for about a month, when it’s extra fizzy you know it’s about to go that’s when you can add it to boiling soup.

You can adjust the spice level, if you don’t want it so spicy but I find the pepper also aids in digestion.

 

 

 

Why you don’t want to eat fermented foods and what you should eat

These days fermented foods like Kimchi are all the craze, people are putting it in everything they eat and putting lot’s of it.  Why you don’t want to eat fermented foods: Kimchi is very salty as is Sauerkraut , if you have ever had dinner at a Korean restaurant you would see that they give you this tiny portion of Kimchi in a tiny tiny dish, it’s because it’s only meant to be eaten in small portions but with the western mentality we usually end up going over board  and putting loads of it on burgers, hot dogs, on everything and end up with high blood pressure! Our ancestors had no choice but to ferment foods, we have a choice to eat fresh vegetables and get our probiotics elsewhere. My grandmother use to eat fermented vegetables and make her own but she only ate a tiny tiny dish of it during a meal.

You can buy probiotic drinks at any grocery store or even make it yourself. Or you can take probiotic pills.

So please skip this trend or eat this once in a blue moon.
